Pickled Polish Sausage

This is a delicious homemade Polish sausage from our grandma's recipe book (1930)!  We grind the pork, mix in the seasonings, and then stuff it into casings.  We cook it, cut it, and pickle it in a vinegar brine with red pepper flakes, chipotle, peppercorns, garlic, and a bay leaf.  These hit every note once you try them.

Ingredients:  Pork, water, garlic, marjoram, salt, vinegar, water, brown sugar, red pepper flakes, chipotle flakes, Kosher salt, potassium sorbate, sodium benzoate.
